Peanut butter! It’s one of most peoples’ favourite foods. Peanut butter sandwiches were a staple in our house growing up, and remain such a great snack to take hiking and ski touring. We all have those strange food combinations particular to our families, strange food combinations that you eat growing up, but when you present it to people outside the family they go “EW! You put those two foods together?”. In the Blenkarn house, it was peanut butter and dill pickle sandwiches; in others it was peanut butter and cheese.
When it comes to choosing which peanut butter to eat, I know many who swear by natural peanut butter, like Adams. Secretly, I LOVE processed peanut butter, like Kraft. Adams is great too though. The recipe i’m posting today allows you to use whichever peanut butter you prefer! You can use natural, crunchy, smooth, or processed. Go to town!
Peanut Butter Chocolate Chip Cookies
1/4 cup butter
1 cup peanut butter
1/2 cup brown sugar
1/2 cup white sugar
1 tsp vanilla
1 tsp baking soda
1/2-1 tsp salt
3/4 cup flour
1 1/4 cup whole oats
1/2-3/4 cup chocolate chips
1.) Preheat oven to 350 degrees and line two baking sheets with parchment.
2.) Cream together butter and sugar, adding the egg, vanilla and peanut butter. Cream until the ingredients are smooth and fluffy.
3.) In a separate bowl combine the flour, oats, baking soda and salt. Add dry ingredients to wet and mix until combined.
4.) Roll dough into 1 tbsp balls, or as big/small as you want. Press dough flat with a fork or your fingers.
5.) Bake cookies for 10-12 mins, or until they look baked! I like some to be softer, and others to be more brown on the bottom for variation!
