I don’t know about you, but this fall is BUSY! This weekend, Shane and some friends and I went to Cirque du Soleil and it was absolutely amazing. So much about this fall has been new and different. Some days I find myself so stoked on life, and other days I feel run down. Some days I meal prep, some days I snack all day. Some nights I get a great sleep, other nights i’m tossing and turning. Change is in the air people, and adulting is hard!

I am the biggest snacker, and because I have been so busy, on-the-go food is so convenient! These vanilla flavoured coconut walnut bites are so delicious, and so easy!

Ingredients:
2 cups dates
1 teaspoon vanilla
1/2 tsp salt
2 tsp coconut oil
1 cup walnuts
1.5 cups shredded coconut
Directions:
1.) Combine dates, vanilla, salt, and coconut oil in a food processor. Process until the date mixture forms a ball.
2.) Add coconut and walnuts, whiz until well combined and the dough forms balls with your hands.
3.) Store bites in freezer! You can also add chocolate chips or white chocolate chips!
